12Potatoes, small

2 TbsCream cheese, softened

3 TbsSour cream or Greek yogurt

1/2 cupBacon, cooked and crumbled

2 TbsChives, chopped

1/2 cupShredded cheddar cheese

Method
- Preheat oven to 400 degrees. Drizzle potatoes with olive oil and salt.
- Bake potatoes for 25-30 mins until for tender. Allow to cool for about 20 minutes or until cool enough to handle.
- Slice off just the top of each potato and scoop out the insides with a melon baller.
- Place scooped out potato in a bowl. Mash with cream cheese, sour cream, half the cheese and half the bacon, 1 tablespoon chopped chives until smooth.
- Fill the potato shells with the mixture. Bake at 350 degrees for 15-20 minutes until warmed. Top with remaining cheese, bacon and chives. Bake for an additional 5 minutes.
