Ingredients for 2 Servings

    Eggs, over easy
  • 2 Tbs
    Pesto
  • 1 pinch
    Black Pepper
  • 1 pinch
    Kosher salt
  • 1 pinch
    Red pepper flakes
  • 2 slices
    Sourdough bread, toasted
  • 2 oz
    Herbed goat’s cheese

Method

  1. Toast 2 slices of sourdough bread and apply a layer of herbed goat’s cheese to each piece
  2. Add a 1 Tbs of pesto to each piece of toast
  3. Place one over easy egg on top of each piece of toast, on top of the pesto layer
  4. Add salt, pepper and red pepper flakes to taste and enjoy!
